The World Health Organization (WHO) has estimated that almost 1 in 10 people is sickened by eating food processed or prepared by others; it is estimated that approximately 50 percent of cases of illness are due to failures in the culture of the organizations responsible for the safety of products. How the companies safely produces food is important to the consumers.

The world ́s organizations linked to food production such as the FDA (Food and Drug Administration USA) and GFSI (Global Food Safety Initiative) identifying the “behavior” factor as a determining point in the highest incidences of risk causes in plant. Thus, both organizations decide to present their positions, being “behavior” the key point in the success of improving expected results in a system of food safety management.

However, the concern and challenge for food producers continues to be how to involve employees in a Food Safety Culture that they live as part of their life habits. To achieve true behavior change, food safety must be integrated into behavioral measures such as main indicators and real risk assessments. FOOD SAFETY INTERNATIONAL NETWORK (FSIN) launches this Behavior-Based Food Safety Management Program that will provide practical and theoretical knowledge and how to use the tools from psychology adapted for food professional to apply a behavior and skills matrix with food safety best practices.

At the end of this program, they will be able to measure behaviors, indicators and propose strategies through a complete and comprehensive continuous improvement program for sustained success in Food Safety Culture.

Teaching Method

This program consists of 30 hours, which will be taught online presentations in spanish with english simultaneous translation (optional). Which will be taught through six modules. The attendees will be assessed via written assessment to show their understanding, practices and feedback from module II to VI. The attendees who successfully complete will obtain a certificate.

MODULE 1

INTRODUCTION AND FUNDAMENTALS 3 hrs – February 22

Systems Theory and Systems Thinking in Food Safety. Scope and impact on the organizational culture of the Continuous Improvement Program in Behavior-Based Food Safety Management.

 

MODULE 2

DIAGNOSIS 4 hrs – March 1o.

Analyze and document the current situation of the safety culture in your organization, strategy approach and preparation of the general plan. It includes practices, evaluation and feedback.

 

MODULE 3

EDUCATION AND TRAINING 8 hrs – March 22-23

Development of a behavior matrix and competencies linked to the best practices in “food safety” and food safety management programs. Training plan. Includes practices, guides, evaluation and feedback.

 

MODULE 4

COMMUNICATION, LEADERSHIP AND RISK AWARENESS 4 hrs – April 19

Understand and analyze communication on the real impact of accidents and root causes on safety risks. Plan and leadership development linked to the improvement plan. Includes practices, guides, evaluation and feedback.

 

MODULE 5

GOALS AND MEASUREMENT 4 hrs – May 3

Understand and document goals and indicators of positive “constructive” behaviors linked to knowledge, competencies and management programs in food safety, best practices in “food safety” and risk awareness. Includes practices, guides, evaluation and feedback.

 

MODULE 6

REINFORCEMENT AND INTEGRAL MEASUREMENT 4 hrs – May 17

Integration of Indicators and preparation of improvement plan and program. Doubts, questions and conclusions. Includes practices, guides, evaluation and feedback.
